Nachos Mexicana

Done My Way

Ingredients:

  • 2 large bags of Doritos (any flavour) – depending on size of pan
  • 1 bag of Bacon Bits or chicken stripped or mince
  • Lots of Mozzarella cheese
  • 1 packet of Processed Mozzarella cheese sheets (optional)
  • 2 Tomatoes diced
  • 2 Onions diced
  • Hand full of sliced Jalapenos
  • Hand full of sweet Piquantè Peppers (optional)
  • 2 holders of Spicy Guacamole
  • 2 tubs of any type of dip or cream cheese or sour cream

Directions:

Step 1

You will first need to fry your bacon, chicken or mince in a frying pan in whichever oil you like to use. I used coconut oil.

Step 2

If you haven’t bought already grated cheese, then you will need to grate it now and set it aside.

Step 3

You need to dice your tomato and onion and then you need to mix the tomato and onion together. You can use a hand twister or cut it by hand.

Step 4

Put the first layer of Doritos in your pan. Let them overlap. If your pan is large, then you will probably use the whole bag.

Step 5

Next, you need to throw over a layer of bacon and your onion and tomato mix. At this point you must also preheat your oven to 180◦C.

Step 6

You can then put a layer of processed cheese or grated cheese on top of that.

Step 7

Put another layer of Doritos and as before, you need to overlap them and depending on the size of your pan, you may use the whole bag again.

Step 8

Repeat steps 5 & 6 but also add the sliced Jalapenos and sweet Piquantè Peppers to this layer.

Step 9

You can then put your final layer of cheese on. Once you have done that, you can put your pan into the oven for 10 minutes or until the cheese is melted.

Step 10

Once you have melted the cheese, you can add a dollop of your cream cheese and guacamole to the top.

Step 11

You can then separate it into sections for the people you going to be feeding and plate it.

And that’s how I make my Nachos Mexicana. I have changed a few elements here and there every time I make it, but this is just one of them. You can also make it on a plate for one person and use fewer ingredients.

That’s it from me for now…
